Can anyone tell me how or when to add blueberries to my beer? thanks! Blueberries are kinda tough to nail imo. They don't pack much flavor and once fermented, any sweetness they have ferments out and leaves more tart. You will probably need at least a pound per gallon. I like to freeze in a bag and squish them up so the as much flavor and color as possible are exposed, then add during rest. Extracts tend to be frowned upon, but sometimes they can really compliment the flavor of the fruit/flavor you're trying to achieve. Moderation is key using extracts!! Tossing in a vanilla bean tincture can really help bring the flavors out also. And just to put it out there...my family honestly likes using cocktail type syrups like these: Torani. That way you can add as much or as little as you want and there is some sweetness. All depends on what you like!!
